This is the last time we’ll be cooking up this summer favorite until next season. It features local grape tomato, organic fennel, and organic sweet Vidalia onions from Happy Dirt. As the cannellini beans simmer with the fennel and aromatics, we’ll slow roast the tomatoes in the oven and caramelize the onions to bring out all their inherent sweetness and flavor, then stir them into the pot. This soup is always a hit and is sure to please. Simply reheat in a pot on the stovetop until just warm and enjoy.

We’re so happy to be bringing back this incredibly nourishing soup that’s brimming with brightness and subtle aromatic flavors. Local broccoli gives this sippable soup a sweet earthy vibe and you can almost taste the mineral rich soil in the celery and local spinach from Happy Dirt. We’ll blend all this green goodness in an organic coconut milk broth that’s infused with ginger and kaffir lime. A customer shared with us that she enjoys it chilled right out of the fridge.
