All the warming and comforting textures of the beans, greens and coconut milk with the hit of flavor from the shisitos made this soup out of this world. Grab a quart if you know what’s good.
Red beans, black beans, coconut milk, garlic, allspice, and peppers are all ingredients found in Caribbean island cooking and they bring a warming and earthy vibe to this nourishing soup. The beans will slow cook with aromatics and spices before adding in the tomatoes, coconut milk and local collards from Happy Dirt for acidity, sweetness and textural green goodness. For the final touch, we’ll stir in roasted local shisito peppers to add the perfect fruity and peppery undertone. This hearty soup is sure to be a favorite whenever collards are blooming in North Carolina. Warm up in a pot on the stovetop and enjoy.

We’re bringing back this delicious recipe from Sarah Britton of My New Roots. She’s a holistic nutritionist, chef and cookbook author and we just love everything she does. Goodness Cooks’ dishes are often inspired by other people’s recipes and then we tweak and add things and fiddle with them until they become our own, but we’re doing this recipe by the book. So here it is – creamy white lentils blended with caramelized organic sweet onions from Happy Dirt, balsamic vinegar and tahini, topped with our flavorful Sparta Kefalas organic olive oil. Enjoy with crackers and veg or dollop onto any lunch or dinner plate for extra goodness.

This umami-rich noodle soup is a customer favorite every time we run it. First, we’ll simmer sheets of kombu seaweed with white miso to make a broth that has a light, salty-sweet tang. (Sea vegetables are one of the best sources of iodine, an essential micronutrient for thyroid and brain health.) Then, we’ll add sliced local shiitake mushroom from Happy Dirt for earthiness and depth as well as local baby bok choy from Red’s Quality Acre for green mineral goodness. The gluten-free Korean sweet potato noodles are translucent when cooked and have a delicate texture and mild flavor that’s perfect for soups and hot pots. This is comfort and nourishment in a bowl. Enjoy heated up as-is or add fried egg on top for extra sustenance.

We’re happy to be bringing back the perfectly balanced flavors of this beautiful chia pudding. We’ll soak the chia seeds in creamy full-fat coconut milk with a touch of cardamom for an added luxurious taste. Cardamom imparts its slightly piney, floral and citrusy flavor while elevating the sweetness of coconut milk in the best way. Each jar will have a topping of crushed pistachios, hemp seeds, and goji berries. Enjoy it as a snack, a dessert, or even for breakfast with granola and fresh berries. It’s best eaten chilled right out of the fridge.
