This umami-rich noodle soup is a customer favorite every time we run it. First, we’ll simmer sheets of kombu seaweed with white miso to make a broth that has a light, salty-sweet tang. (Sea vegetables are one of the best sources of iodine, an essential micronutrient for thyroid and brain health.) Then, we’ll add sliced local shiitake mushroom from Happy Dirt for earthiness and depth as well as local baby bok choy from Red’s Quality Acre for green mineral goodness.
