Dukkah enhances everything. It’s an Egyptian spice blend and the word literally means “to crush or to pound”. We’ll do exactly this with our custom blend of cumin seeds, coriander seeds, sesame seeds, hazelnuts and black pepper – all organic and full of flavor and micronutrients. We’ll add this to a local kale salad massaged in a lively vinaigrette with local and organic red radish from Happy Dirt, carrot and chopped Medjool dates, adding a touch of sweetness. The kale leaves will be fresh and glistening once dressed. Make yourself a one-bowl lunch with quinoa tabbouleh and a dollop of baba ghanouj.
