We’ll start by halving and roasting organic butternut squash from Happy Dirt with a sprinkling of curry powder until they’re silky soft, sweet and buttery. We’ll blend the squash with our homemade cashew cream, sautéed onions and Honeycrisp apples, adding a tart sweetness to this brightly flavored soup.
