This breakfast porridge is delicious and nutrient-rich way to get in your plant protein and healthy fats first thing in the morning (or anytime!). We’ll be pulling from our freezer stash of plump, juicy local figs from Small Potatoes Farm that were soaking up the sunbeams all summer long. We’ll cook them down with orange peel and a touch of coconut sugar until all the sweetness and flavor is condensed into a jammy marmalade. Each container will have a layer of slow-cooked quinoa porridge, lemon cashew cream, and a generous dollop of the fig and orange jam. Enjoy chilled or warmed up in a saucepan, stirring with a touch of water as needed.
Get some of this gold in your freezer. Defrost and use to brighten up any lunch or dinner.
The name says it all. Sunflower seeds that have soaked up sunbeams in a field somewhere will be lightly toasted and whizzed up to become creamy seed butter. Then with a twist of lime, ginger, coconut milk and a touch of heat from chili flakes you have…sunshine sauce! It’s punchy, smooth and full of flavor. And sunseeds are packed with nutrition – fiber, antioxidants, Vit E, and critical micronutrients, such as selenium, zinc, and manganese that support heart and brain health. Drizzle it over any of this week’s dishes. You can also use it as a salad dressing or to dress up a plain roasted veg or grain bowl. Let this sunny little number brighten your day.
Baba Ghanouj is a traditional middle eastern dip made with blended roasted eggplant and tahini. Its popularity has spread far and wide throughout the world. It can be found in homes from Brazil to the Caribbean. The simplicity of ingredients speaks to the rich flavors that are brought forth in this versatile dip. We’ll roast local eggplant from Happy Dirtand bulbs of garlic to bring out their natural smoky flavors and create a nice caramelization. When whizzed up it becomes silky smooth and delicious. We’ll drizzle aleppo pepper infused Greek organic olive oil on top with a sprinkle of toasted sesame seeds and local parsley for extra eye-catching flavor. This dip will enhance the flavors of all the other dishes on the menu or can also be eaten meze style with a few olives and cucumber sticks as a perk-me-up snack during the day.
