This umami-rich noodle soup is a customer favorite every time we run it. First, we’ll simmer sheets of kombu seaweed with white miso to make a broth that has a light, salty-sweet tang. (Sea vegetables are one of the best sources of iodine, an essential micronutrient for thyroid and brain health.) Then, we’ll add sliced local shiitake mushroom from Happy Dirt for earthiness and depth as well as local baby bok choyfor green mineral goodness. The gluten-free Korean sweet potato noodles are translucent when cooked and have a delicate texture and mild flavor that’s perfect for soups and hot pots. This is comfort and nourishment in a bowl. Enjoy heated up as-is or add fried egg on top for extra sustenance.

This creamy dip is overflowing with earthy sweetness and lemony freshness. We’ll roast organic carrots in olive oil and salt until they’re caramelized to bring out all their deep rich flavors before blending each batch with chickpeas, tahini and lemon. Then we’ll top off each pot with a drizzle of Aleppo pepper pepper, olive oil, and toasted pumpkin seeds. This is a dip that will keep you afloat during the week – add to any plate you make this week with our sides, use as a spread on some toast, a dip for veggie sticks + chips, or as an add-on to an abundant salad bowl.
