NEW! Beef Mushroom Ragu with Local Tomato

This new dish is a celebration of the bounty of tomato season. We’re sourcing locally grown organic beefsteak tomatoes from Happy Dirt, as well as organic shiitakes and baby bellas and local grass-fed ground beef from Firsthand Foods for this Italian favorite that’s east to love. We’ll stew the tomatoes in herbs, spices and aromatics and slow cook the mushrooms in the sauce in big batches, before stirring in the seared ground beef and fresh parsley to bring all the flavors together. This ragu will be delicious with our spinach rice or serve over your choice of pasta or polenta you might have in your cupboard. Reheat on medium heat in a saucepan until warm, stirring.

The silky smooth base from the “milk” of the corn, plus the coconut milk and creamy potatoes are complemented perfectly by the crisp corn kernels and peppers in this summertime soup. To finish, each container will be garnished with a pop of organic green onion. Reheat on low heat in a saucepan and enjoy.

This version features creamy cannellini beans, local cilantro, a blend of spices, and roasted local shisito pepper and poblano pepper for just a hint of heat. Our housemade chicken bone broth made using Dawnbreaker Farms chicken lends this chili so much depth of flavor and nutrition. As a finishing touch, we’ll stir in local spinach for extra green goodness. Simply warm up on the stovetop and enjoy this meal in a bowl. Top tip: stir in a dollop of yogurt or sour cream for extra oomph.

NEW! Roasted Local Summer Squashes with Hazelnut Mint Gremolata

We’re kicking off the summer with a new dish that’s the very essence of the season here in North Carolina. There’s nothing like summer squashes cooked over high heat, so we’re roasting hefty slices of these summer beauties and tossing them in small batches with a hazelnut gremolata that features the freshness of mint and lemon and a sweet hint from apricot. Enjoy with every plate you make this week either cold or warmed up gently in a sauté pan.

Ribboned Carrot Radish Salad with Microgreens + Orange Dijon Vinaigrette

This salad feels like spring with an abundance of carrot and local red radish from Red’s Quality Acre, as well as microgreens from Axis Produce. The unique texture of the carrot ribbons with the crunch of the radish and pistachios is very satisfying, and you’ll be getting your fiber for the day in the most enjoyable way. The vinaigrette is sharp and tangy with a touch of sweetness from orange and maple, while fresh dill from Red’s rounds it all out. With the dressing on the bottom, you’ll simply empty into a bowl and mix before serving. A quart makes enough salad for 3-4 people as a side or for 2 people to have a generous portion as a meal.

This is a classic hummus with a crown of emerald green. It’s vibrant, tangy and packed with local Red Hawk Farm basil, local garlic chives from Red’s Quality Acre, organic spinach, and Fair Trade organic avocado. Add it to a salad, sandwich or wrap, or simply spoon some onto any GC plate you make this week for extra goodness. And we’re using our Greek Sparta Kefalas olive oil in this dish – a flavorful and antioxidant-rich organic single pressed olive oil from a small orchard southeast of Sparta, called Kefalas, sourced from the Haw River Wine Man in Burlington.

We’ll soak cashews and blend them with luscious full fat coconut milk, a drop of vanilla, a squeeze of lemon and the first fresh NC grown organic blueberries from Happy Dirt to create a delicious dark purple filling – only the good stuff here. We’ll layer this on top of a date sweetened walnut almond crust and top with a layer of pure blueberry and lemon zest compote that adds a fresh and light dimension to this treat.

    Maple Cinnamon Pecan Granola

This granola features one of our very favorite flavor combinations – maple, pecan and cinnamon. We’ll caramelize the pecans with organic maple syrup and coconut oil then combine them with batches of warm cinnamon-y granola as they come out of the oven, infusing every bite with maple pecan goodness. We use only quality ingredients with an abundance of nuts and seeds. You can truly taste, see, and smell the difference. Serve with this week’s hemp milk or with your milk of choice in the morning. This granola will keep for a month in an airtight container.

    Blue Spirulina Hemp Milk

If you’ve never had freshly made hemp milk, you’re in for a treat. Hemp milk is considered the best milk alternative for many reasons – it’s high in omega-3 fatty acids, essential minerals and protein while also being low in carbohydrates. And growing hemp is good for the planet, helping to regenerate the soil and purify the air – pretty amazing. Hemp milk has a slightly nutty flavor and a nice light and creamy texture. We’ll sweeten the hemp milk with dates and vanilla and add a touch of blue spirulina for extra nutrition and bold indigo color. Serve over your cereal of choice, add to oatmeal or your nighttime herbal tea, or use as the base of a smoothie. The options are endless.

    Chocolate Elixir

We’ve created a divine beverage – energizing, bittersweet, fulfilling. Enjoy sipping in the morning as a better-than-coffee alternative. Cacao powder is loaded with antioxidants and minerals that nourish your body and feed your cells. Reishi mushroom – which grows on the bark of hardwood trees – supports the immune system, improves sleep, and lessens fatigue. To round it out, we’re adding Lion’s Mane – a shaggy white mushroom that grows on decaying hardwoods, such as beech, sycamore and birch trees. While it’s most known for improving cognitive health and enhancing neuroplasticity, Lion’s Mane has many other healing properties which include supporting gut health and reducing inflammation. This triad balances and supports the body so well. We don’t make this drink super sweet, so feel free to add extra sweetener, a dash of maple, a stir of honey, or a scoop of collagen powder for extra oomph. Shake it up then either pour over ice or heat it up on your stove top.

Spiced Matcha Latte with Lion’s Mane

The first thing to note about this delicious concoction is that it’s caffeinated, but due to the many unique properties of matcha, you’ll feel a calm alertness without the jittery effects you get from coffee or tea. Matcha is a Japanese shade-grown green tea powder that’s loaded with powerful antioxidants, called polyphenols, and many other bioactive compounds with various health benefits, such as improved cognitive function, collagen production and reduced stress. Because matcha green tea plants are grown in the shade, the leaves are very rich in chlorophyll, which naturally supports the detoxification pathways in the body. Matcha even has the reputation of aiding Zen monks in meditation. We’ll balance out the earthy flavor of the matcha with warming spices and cashew milk to create this spectacular beverage for your morning ritual. Warm it up on the stovetop, stirring, or simply shake it up and drink cold.
