This comforting classic is making a welcome comeback. As always, it will star our GC-made stock featuring chicken bones from Dawnbreaker Farms in Hurdle Mills – where they pasture raise their birds with great care using environmentally regenerative practices. We’ll simmer the bones with black peppercorn, bay leaf, coriander seed, garlic cloves, ginger, and turmeric to create a flavorful stock that’s rich in collagen, vitamins, minerals and amino acids that support gut function, brain health and immunity. Together with chicken, rice noodles, carrots and a splash of green onion, this soup ticks every box. It’s delicious warmed up in a saucepan or, believe it or not – cold right out of the fridge!

Green Lentil Dal with Local Spinach + Sweet Potato

Dishes made from cooking a pulse – lentil, bean, or split pea – with spices and aromatics cooked in oil and added at the end is called a ‘dal’ in India. This version of dal is made with organic green lentils that have an earthy taste and soft texture. They’re a perfect source of plant nutrition filled with protein, fiber and minerals. We’ll simmer the lentils with local sweet potato from Happy Dirt, then stir in local spinach and cilantro from Red’s Quality Acre, and coconut milk with all the toasted spices and aromatics. This is truly nourishment in a bowl. Heat on the stovetop, adding a squeeze of lime if you prefer, and enjoy.

It’s soothing on the digestive system and completely satisfying to drink up the flavorful braising liquid. Each quart will have over three bunches of local, organic collards from Happy Dirt, so this is a delicious way to get in your greens. Enjoy alongside the meatballs or serve up a veg plate with the cilantro rice and hummus. We rarely get around to making this dish, but we’d love you to experience this peak-season goodness. Reheat gently on the stovetop and rejoice.

Local Kale Salad with Honey Ginger Dressing + Toasted Hemp Seed

This new colorful layered salad features ribbons of local lacinato kale and julienned red pepper from Happy Dirt along with local Stella Rosa radicchio and red radish from Red’s Quality Acre. The honey ginger dressing on the bottom has a pink hue from fresh pressed beet juice and a light creaminess from a touch of tahini. The nutty toasty aroma of the hemp seed and crunch of the almond are the final touch to this enlivening salad. The dressing will be on the bottom, so you’ll simply pour the contents into a bowl and toss together before serving. A quart makes enough salad for 3-4 people as a side or for 2 people to have a generous portion as a meal. Serve cold and enjoy alongside any of this week’s sides for a satisfying meal.

This dish is comforting and easy to digest and is a go-to starch for every meal you make with your GC order this week. This colorful dip has a creamy texture and a balanced flavor that’s sure to please – there’s creamy sweetness from the purple sweet potato, acidity from the lime, and earthiness from the tahini and chickpea. Then, we’ll pan fry peanut with chili flake and cilantro to top off this hummus, adding a touch of heat and that special something that only the beloved peanut brings. Dip into this with raw veg or simply spoon onto your plate for added color and flavor. Enjoy cold right out of the fridge.

    NEW! Golden Granola

This new granola lives up to its name with golden turmeric, golden honey, and chewy, tart golden berries to top it off. Golden berries are a “superfruit” and are like a blend of a tomato and a cherry with a tart sweet citrusy-mango flavor. The turmeric adds an earthy tone while the coconut chips bring a unique texture. The crushed Indian coriander seed gives it that something extra you can’t quite put your finger on. With all organic ingredients, an abundance of nuts, and enticing flavors, you’ll be sure to love this new addition to our granola line-up.

    Meyer Lemon Cashew Dessert

Meyer lemons are a cross between a lemon and a mandarin orange and native to China. They’re super fragrant and their flavor is slightly sweeter than a regular lemon with floral notes. There’s no beating around the bush – this dessert is divine. The stars align here when we zest and juice these little suns and whip them up with luscious coconut milk and creamy cashews. We’re making a coconut almond base for the bottom and – for added VIVA! – a raspberry compote on top. Enjoy right out of the fridge.

    Cherry Ashwagandha Hemp Milk

We’re bringing you another hemp milk deluxe! We’ll blend organic cherries with ashwagandha, an Ayurvedic herb that’s known for its adaptation healing properties and promoting restorative sleep. If you’ve never had freshly made hemp milk, you’re in for a treat. Hemp milk is considered the best milk alternative for many reasons – it’s high in omega-3 fatty acids, essential minerals and protein while also being low in carbohydrates. And growing hemp is good for the planet, helping to regenerate the soil and purify the air – pretty amazing. Hemp milk has a slightly nutty flavor and a nice light and creamy texture. We lightly sweeten our hemp milk with dates and never add any fillers, gums, or stabilizers like you’ll find in store-bought varieties, so shake it up before pouring. Serve cold with our granola for the perfect breakfast or snack. You can also pour over your cereal of choice, add to oatmeal or use as the base of a smoothie or drink as is. The options are endless.

    Chocolate Elixir

We’ve created a divine beverage – energizing, bittersweet, fulfilling. Enjoy sipping in the morning as a better-than-coffee alternative. Cacao powder is loaded with antioxidants and minerals that nourish your body and feed your cells. Reishi mushroom – which grows on the bark of hardwood trees – supports the immune system, improves sleep, and lessens fatigue. To round it out, we’re adding Lion’s Mane – a shaggy white mushroom that grows on decaying hardwoods, such as beech, sycamore and birch trees. While it’s most known for improving cognitive health and enhancing neuroplasticity, Lion’s Mane has many other healing properties which include supporting gut health and reducing inflammation. This triad balances and supports the body so well. We don’t make this drink super sweet, so feel free to add extra sweetener, a dash of maple, a stir of honey, or a scoop of collagen powder for extra oomph. Shake it up then either pour over ice or heat it up on your stove top.

Spiced Matcha Latte with Lion’s Mane

The first thing to note about this delicious concoction is that it’s caffeinated, but due to the many unique properties of matcha, you’ll feel a calm alertness without the jittery effects you get from coffee or tea. Matcha is a Japanese shade-grown green tea powder that’s loaded with powerful antioxidants, called polyphenols, and many other bioactive compounds with various health benefits, such as improved cognitive function, collagen production and reduced stress. Because matcha green tea plants are grown in the shade, the leaves are very rich in chlorophyll, which naturally supports the detoxification pathways in the body. Matcha even has the reputation of aiding Zen monks in meditation. We’ll balance out the earthy flavor of the matcha with warming spices and cashew milk to create this spectacular beverage for your morning ritual. Warm it up on the stovetop, stirring, or simply shake it up and drink cold.
