    Chicken Chermoula

The flavor of this chicken dish is *incredible*. It features chermoula, a pesto-like paste originating in Morocco that’s used as an aromatic rub or marinade for grilled meats and vegetables. There are many versions of chermoula, but they most often feature cumin, coriander, lemon and chili pepper in olive oil. The vibrant green, bold flavors of chermoula are the perfect match for poultry and make for an incredible delicious oven roasted skewer. Serve with any side this week and a dollop of hummus if you know what’s good. Reheat in a 350 oven on a sheetpan until warm or in a saucepan over medium heat with a touch of olive oil.

    Thai-Style Red Kuri Squash Curry

This is a customer favorite that satisfies on so many levels. The comforting textures of the vegetables with the bold flavors of the aromatics and richness of the coconut milk are pure perfection. Also, it’s packed with produce – organic cauliflower, local green cabbage and local red kuri squash from Happy Dirt. We’ll simmer the veg in a coconut broth with lemongrass, ginger, tomatoes – then finish with an uplifting touch of lime. Reheat in a saucepan and serve with extra lime and cilantro if desired.

Beef + Bean Chili with Local Spinach + Peppers

This is our take on the classic beef and bean chili with all the very best ingredients – local grass-fed beef from Firsthand Foods, organic pinto and kidney beans, local bell peppers from Happy Dirt, Carmen green peppers from Red’s Quality Acre, and a blend of warming spices. We’re stirring in freshly harvested local spinach from Red’s at the end for extra nutrition. It’s a complete meal in a bowl, just reheat and eat. Stock your fridge with this anytime favorite. Enjoy alongside this week’s salad for an epic meal of pure seasonal satisfaction.

Roasted Sweet Potato + Chickpea with Tahini Sauce

The stars of this dish are the soft, pillowy chunks of perfectly cured and roasted local Garnet sweet potatoes from Happy Dirt. We’ll layer these beauties with roasted chickpeas and fresh local herbs from Red’s Quality Acre in a tart and bright tahini sauce featuring pomegranate molasses and a touch of lemon. The textures are outrageously satisfying here; plus, the sesame and nigella seeds really make it pop. The tahini sauce will be on the bottom, so you can reheat the dish in a saucepan then pour over the sauce to serve. Or simply serve cold! This dish pairs well with everything this week, so don’t miss out.

Citrus Braised Local Beets with Fennel

This is one of our very favorite dishes. We braise local red and golden-pink Badger Flame beets until their skins slip off easily, slice them thinly and add shaved organic fennel from Happy Dirt, coating everything with a citrus vinaigrette featuring Cara Cara orange and lime juice. It’s bright, tangy and luxuriously textured. This salad can be eaten with anything and it’s as nutrient dense as it is satisfying. If you’re not a beet fan – TRY THIS. You might just be a convert. This dish can be eaten right out of the fridge and is still delicious at room temperature. Serve with all of this week’s dishes.

Quinoa with Broccoli + Citrus Sunbutter Dressing

We’re excited to be bringing back this dish featuring local broccoli and local watermelon radish from Happy Dirt. The broccoli is blanched and lightly roasted then tossed with warm fluffy quinoa, vibrant julienned radish for a bit of crunch, toasted sunflower seeds, fresh mint and a light and citrus-y sunbutter dressing that will tie it all together. Enjoy cold or reheat in a saucepan over medium until warm. Serve with the chicken or any of this week’s sides for a veg plate.

    Green Goddess Hummus

This is a classic hummus with a crown of emerald green – vibrant, tangy and full of local dill, parsley, and spinach from Red’s Quality Acre and Fair Trade organic avocado. Add it to a salad, sandwich or wrap, or simply spoon some onto any GC plate you make this week for extra goodness. And we’re using our Greek Sparta Kefalas olive oil in this dish – a flavorful and antioxidant-rich organic single pressed olive oil from a small orchard southeast of Sparta, called Kefalas, sourced from the Haw River Wine Man in Burlington.

    Cherry Chocolate Dessert

The combination of cherries and chocolate is pure deliciousness. The decadent chocolate depth melds with the sweet sour cherry flavor brilliantly. There’s cherries blended into the creamy chocolate cashew pudding and a cherry compote on top. And we’re adding a smooth, house-made hazelnut butter – because the only thing better than chocolate and cherry, is chocolate and hazelnut. Enjoy right out of the fridge.

    Chocolate Elixir

We’ve created a divine beverage – energizing, bittersweet, fulfilling. Enjoy sipping in the morning as a better-than-coffee alternative. Cacao powder is loaded with antioxidants and minerals that nourish your body and feed your cells. Reishi mushroom – which grows on the bark of hardwood trees – supports the immune system, improves sleep, and lessens fatigue. To round it out, we’re adding Lion’s Mane – a shaggy white mushroom that grows on decaying hardwoods, such as beech, sycamore and birch trees. While it’s most known for improving cognitive health and enhancing neuroplasticity, Lion’s Mane has many other healing properties which include supporting gut health and reducing inflammation. This triad balances and supports the body so well. We don’t make this drink super sweet, so feel free to add extra sweetener, a dash of maple, a stir of honey, or a scoop of collagen powder for extra oomph. Shake it up then either pour over ice or heat it up on your stove top.

Spiced Matcha Latte with Lion’s Mane

The first thing to note about this delicious concoction is that it’s caffeinated, but due to the many unique properties of matcha, you’ll feel a calm alertness without the jittery effects you get from coffee or tea. Matcha is a Japanese shade-grown green tea powder that’s loaded with powerful antioxidants, called polyphenols, and many other bioactive compounds with various health benefits, such as improved cognitive function, collagen production and reduced stress. Because matcha green tea plants are grown in the shade, the leaves are very rich in chlorophyll, which naturally supports the detoxification pathways in the body. Matcha even has the reputation of aiding Zen monks in meditation. We’ll balance out the earthy flavor of the matcha with warming spices and cashew milk to create this spectacular beverage for your morning ritual. Warm it up on the stovetop, stirring, or simply shake it up and drink cold.
