This dish has an incredible trifecta of local organic veg, with green beans, tomatoes, and shisitos from Happy Dirt. We’ll slow roast the tomatoes for a couple hours until they’re slightly chewy and super sweet and roast the shishito peppers at high heat until they’re blistery before tossing each batch with perfectly cooked green beans. A touch of sesame and rice vinegar will accentuate all the flavors and give it a nice earthy umami note. Don’t miss out on this seasonal dish. This is one of our very favorite dishes. We braise local red beets until their skins slip off easily, slice them thinly and add shaved organic fennel from Happy Dirt, coating everything with a citrus vinaigrette featuring Cara Cara orange and lime juice. It’s bright, tangy and luxuriously textured. This salad can be eaten with anything and it’s as nutrient dense as it is satisfying. If you’re not a beet fan – TRY THIS. You might just be a convert. Chicken Bridge Bakery is a NCDA certified home bakery run by Rob & Monica Segovia-Welsh. They focus on building the local grain economy by supporting North Carolina farmers and millers. They source their whole grain, stone milled flours from Carolina Ground (Hendersonville) and Red Tail Grains (Chapel Hill). Their other organic flours and grains are milled by Lindley Mills (Graham). They use fermentation methods in their breads to increase flavor and digestibility and bake all of their breads in a wood fired brick oven. We’re sourcing fresh local blueberries from Happy Dirt for this creamy delicious chia pudding. If you’ve never had our chia puddings before, you’re in for a true double-y blue treat. We’ll soak chia seeds in creamy full-fat coconut milk and stir in blue spirulina powder, which is neutral in flavor and a nutritional powerhouse full of antioxidants, minerals and chlorophyll. If you’ve never had freshly made hemp milk, you’re in for a treat. Hemp milk is considered the best milk alternative for many reasons – it’s high in omega-3 fatty acids, essential minerals and protein while also being low in carbohydrates. And growing hemp is good for the planet, helping to regenerate the soil and purify the air – pretty amazing. Hemp milk has a slightly nutty flavor and a nice light and creamy texture. We’ll sweeten the hemp milk with dates and vanilla, then add raspberries and Terrasoul baobab powder for an extra boost of vitamin C and juiciness. The first thing to note about this delicious concoction is that it’s caffeinated, but due to the many unique properties of matcha, you’ll feel a calm alertness without the jittery effects you get from coffee or tea. Matcha is a Japanese shade-grown green tea powder that’s loaded with powerful antioxidants, called polyphenols, and many other bioactive compounds with various health benefits, such as improved cognitive function, collagen production and reduced stress. We’ve created a divine beverage – energizing, bittersweet, fulfilling. Enjoy sipping in the morning as a better-than-coffee alternative. Cacao powder is loaded with antioxidants and minerals that nourish your body and feed your cells. Reishi mushroom – which grows on the bark of hardwood trees – supports the immune system, improves sleep, and lessens fatigue. To round it out, we’re adding Lion’s Mane – a shaggy white mushroom that grows on decaying hardwoods, such as beech, sycamore and birch trees. While it’s most known for improving cognitive health and enhancing neuroplasticity, Lion’s Mane has many other healing properties which include supporting gut health and reducing inflammation.
