We’re making a roasted chicken dish that will satisfy your craving for all the most beloved Mediterranean flavors. We’ll marinate the chicken thighs overnight in olive oil, lemon, allspice, garlic, and our housemade za’atar blend before roasting them up to perfection. Za’atar is said to have its origins in ancient Egypt and translates to ‘wild oregano’. It’s a mixture of thyme, oregano, sesame seeds and sumac – a real powerhouse of flavor. Sumac is a spice made from the vibrant berries of a Middle Eastern shrub, known for its slightly lemony flavor and dark red color. Serve with any of this week’s sides and a dollop of caramelized onion dip for extra deliciousness. Reheat in the oven at 350 until warmed through.

The unique flavors of cauliflower, creamy potatoes, fresh herbs and homemade cashew milk come together to make a soup that’s simply nourishment for the soul. This is a soup we’ve absolutely mastered over the last couple years and we’re always happy when it fits on a menu. We’re updating this version for the season by topping each soup with a gremolata of chopped Castelvetrano olive, lemon zest, and local parsley from Red’s Quality Acre. Reheat gently in a saucepan or sip cold. (Feel free to stir in a bit of water to the pot when reheating to get the consistency you like best.)

The stars of this dish are the soft, pillowy chunks of perfectly cured and roasted local sweet potatoes from Happy Dirt. We’ll layer these beauties with roasted chickpeas and fresh herbs in a tart and bright tahini sauce featuring pomegranate molasses and just a touch of lemon. The textures are outrageously satisfying here; plus, the sesame and nigella seeds really make it pop. The tahini sauce will be on the bottom, so you can reheat the dish in a saucepan then pour over the sauce to serve. Or simply serve cold! This dish pairs well with everything this week, so don’t miss out.

We’re bringing you one of our much loved layered salads featuring salad greens, chioggia beet, and strawberries from Red’s Quality Acre in Durham. There’s a balance of flavors and textures from the crispness of the beet and greens, the sweetness of the carrot, the nutty crunch of the candied walnuts, and the tartness of the strawberry vinaigrette. This one is not to be missed. With the dressing on the bottom, you’ll simply empty into a bowl and mix before serving. A quart makes enough salad for 3-4 people as a side or for 2 people to have a generous portion as a meal. This salad will be perfect alongside any of this week’s dishes or served with a fried egg on top for lunch.

Red’s Quality Acre, one of our favorite local farms, is offering cucumbers for the first time this season, so we jumped at the chance to feature this satisfying seasonal dish. Tabbouleh originated in the mountains of Lebanon, and has been an essential part of Middle Eastern cuisine for thousands of years. It’s traditionally made with cracked bulgur wheat and a generous amount of parsley, lemon and tomato. We’re switching grains in our version and using quinoa instead, as well as an abundance of herbs with grape tomatoes, cucumber and olive oil. This dish is light, crunchy, and full of fresh flavors that enhance every other dish on the menu. Don’t miss it! Serve cold.

We’re bringing back this delicious recipe from Sarah Britton of My New Roots. She’s a holistic nutritionist, chef and cookbook author and we just love everything she does. Goodness Cooks’ dishes are often inspired by other people’s recipes and then we tweak and add things and fiddle with them until they become our own, but we’re doing this recipe by the book. Funny thing is we both saw this recipe and had bookmarked it to tell each other we should try it for GC. Some things are just meant to be! So here it is – creamy white lentils blended with caramelized organic yellow onions from Happy Dirt, balsamic vinegar and tahini, topped with our flavorful Sparta Kefalas organic olive oil. Spread onto pita, cut-up veg and rice crackers or dollop onto any lunch or dinner plate for extra goodness.

This umami-rich noodle soup is a customer favorite every time we run it. First, we’ll simmer sheets of kombu seaweed with white miso to make a broth that has a light, salty-sweet tang. (Sea vegetables are one of the best sources of iodine, an essential micronutrient for thyroid and brain health.) Then, we’ll add sliced local shiitake mushroom from Happy Dirt for earthiness and depth as well as local baby bok choy for green mineral goodness. The gluten-free Korean sweet potato noodles are translucent when cooked and have a delicate texture and mild flavor that’s perfect for soups and hot pots. This is comfort and nourishment in a bowl. Chicken Bridge Bakery is a NCDA certified home bakery run by Rob & Monica Segovia-Welsh. They focus on building the local grain economy by supporting North Carolina farmers and millers. They source their whole grain, stone milled flours from Carolina Ground (Hendersonville) and Red Tail Grains (Chapel Hill). Their other organic flours and grains are milled by Lindley Mills (Graham). They use fermentation methods in their breads to increase flavor and digestibility and bake all of their breads in a wood fired brick oven. Chicken Bridge Bakery has been feeding their community for over 12 years and we’re so excited to be offering their bread to serve at your table. We’re now offering these three signature breads every week! Click here to learn more about Chicken Bridge Bakery!

We’re bringing you another hemp milk deluxe! We’ll blend organic cherries with ashwagandha, an Ayurvedic herb that’s known for its adaptation healing properties and promoting restorative sleep. If you’ve never had freshly made hemp milk, you’re in for a treat. Hemp milk is considered the best milk alternative for many reasons – it’s high in omega-3 fatty acids, essential minerals and protein while also being low in carbohydrates. And growing hemp is good for the planet, helping to regenerate the soil and purify the air – pretty amazing. Hemp milk has a slightly nutty flavor and a nice light and creamy texture. We lightly sweeten our hemp milk with dates and never add any fillers, gums, or stabilizers like you’ll find in store-bought varieties, so shake it up before pouring. Serve cold with our granola for the perfect breakfast or snack. You can also pour over your cereal of choice, add to oatmeal or use as the base of a smoothie or drink as is. The options are endless. This tea is all about nourishing the nervous system and gladdening the heart. Skullcap is a restorative tonic for the nervous system. It settles the mind and body and can help regulate sleep patterns. It’s slightly astringent and the flavor has been compared to that of light green tea, although there is no caffeine of course. Wood betony is a tad sweet and lightly pungent with nervine qualities that soothes and calms, just like being by the ocean or a trickling stream. Lemon balm is known as the ‘JOY’ herb that uplifts the heart and brightens the spirit. And the fresh sweet sparkle of mint will provide the canvas for all the other herbs in this blend to rest into. Enjoy this tea chilled for an infusion of comfort.

The first thing to note about this delicious concoction is that it’s caffeinated, but due to the many unique properties of matcha, you’ll feel a calm alertness without the jittery effects you get from coffee or tea. Matcha is a Japanese shade-grown green tea powder that’s loaded with powerful antioxidants, called polyphenols, and many other bioactive compounds with various health benefits, such as improved cognitive function, collagen production and reduced stress. Because matcha green tea plants are grown in the shade, the leaves are very rich in chlorophyll, which naturally supports the detoxification pathways in the body. Matcha even has the reputation of aiding Zen monks in meditation. We’ll balance out the earthy flavor of the matcha with warming spices and cashew milk to create this spectacular beverage for your morning ritual. Warm it up on the stovetop, stirring, or simply shake it up and drink cold. (Hot tip: You could add it to a blender and whizz it up with half a banana to create an even more creamy and sustaining morning affair. This is Lizzie’s new morning obsession.) **We’re upgrading our matcha moving forward to Jade Leaf’s ceremonial grade Teahouse Edition for a more vibrant beverage with a sweeter note and even more nutrition. They work directly with a grower’s collective in Kyoto to offer their premium quality matcha.

We’ve created a divine beverage—energizing, bittersweet, fulfilling. Enjoy sipping in the morning as a better-than-coffee alternative. Cacao powder is loaded with antioxidants and minerals that nourish your body and feed your cells. Maca boosts energy and endurance, while the powerful Reishi mushroom, which grows on the bark of hardwood trees, especially oaks, supports the immune system, improves sleep, and lessens fatigue. This triad balances and supports the body so well. And we’ve upped the potency this week by adding Lion’s Mane, a shaggy white mushroom that grows on decaying hardwood, such as beech, sycamore and birch trees. While it’s most known for improving cognitive health and enhancing neuroplasticity, it has many other healing properties including supporting gut health and reducing inflammation. We don’t make this drink super sweet, so feel free to add extra sweetener, a dash of maple, a stir of honey, or a scoop of collagen powder for extra oomph. Shake it up then either serve cold over ice or heat it up on your stove top.
